Measure with precision

In baking, a few grams more or less of flour or sugar is enough to change the texture of what comes out of the oven. That's exactly why professional bakers always weigh in grams rather than measuring by the cup.

A small digital scale is the single best investment for your kitchen — accurate, fast, and easy to clean. Get into the habit of taring (zeroing out) the scale after each ingredient.

Quick notes
A cup of flour can weigh anywhere from 120–160g depending on how you scoop it
Measuring liquids in grams is more accurate than by ml, too
Write your recipes down in grams so you can repeat them exactly next time
